Each season, each batch, and each leaf behaves slightly differently - these are our suggested starting points for getting the best from each tea:

du - black

Leaf: 2–3g
Water: 120ml at 90–95°C
Time: 2–3 minutes

A fuller extraction brings depth and structure.

Adjust time depending on whether you prefer a lighter or stronger cup.

tost - roasted green & stém - steamed green

Leaf: 2–3g
Water: 120ml at 80-85°C
Time: 1–2 minutes

Start gently. Cooler water preserves sweetness and softness.

Re-infuse 2–3 times, increasing time slightly with each brew.

We know this is quite divisive(!) but we really recommend enjoying our teas without milk to experience the full clarity and character of the leaf
